Vegan Tiffin Recipe

This December I seem to have made enough tiffin to feed a whole village...
I've made six batches of tiffin this month and I've had a lot of people request the recipe so I thought I'd do a quick blog post on it. I've done 4 different variations of the stuff so I'll do the basic tiffin recipe followed by the 4 different types I've made.
A quick side note: I will return in the new year to my weekly blog posts, I've been enjoying home life and my Christmas break for the time being but will be back to regular posts soon!
Basic Vegan Tiffin:
Ingredients:
- 100g vitalite butter (or another dairy free alternative)
- 2x 100g bars of 70% lindt dark chocolate (can use 90% if you like it rich)
- 4tbl spoons of golden syrup
- 1 pack of biscuits (any kind works: ginger, oreo or rich tea etc)
- Dried fruit or tinned fruit (e.g tin of cherries)
Method:
1. Melt the butter, golden syrup and 1 bar of chocolate in a saucepan - stirring continuously until melted - when melted put to one side.
2. Put the biscuits in a sandwich bag and bash them with a rolling pin until you've got small crumbs (do leave in some big chunks and also be careful that the bag doesn't split - talking from experience here)
3. Tip the biscuits and fruit into a bowl and pour over the melted ingredients
4. Mix all the ingredients together
5. Line a baking tin with baking paper
6. Tip the mixed ingredients into the tin and flatten down with a spoon
7. Return to the saucepan and melt the other bar of chocolate until smooth
8. Pour the melted chocolate over the ingredients in the tin and put it in the fridge to set (it usually takes a good few hours to set)
9. Cut it how you please and enjoy
Now I'll go into detail about some of the different kinds of tiffins I've made this Christmas:
- Ginger Tiffin
- Tia Maria and Dried Fruit
- Chocolate Orange
- Cherry and Oreo
All the variations follow the same ingredients as the basic recipe but I'll be specific about each choice of biscuit, fruit and extra for the types of tiffin listed so you can follow them too:
Ginger Tiffin
Ingredients:
- 1x pack of Ginger biscuits
- 100g of dried fruit
Tia Maria and Dried Fruit
(I mean, slight give away in the name)
Ingredients:
-1x pack of Oreo biscuits
- 100g of dried fruit
- 50 ml Tia Maria (mix in with the melting ingredients)
Chocolate Orange
Ingredients:
- 1x pack of Rich Tea biscuits
- 100g of dried fruit
- Zest of half an orange (to sprinkle on top of mixture before it goes in the fridge)
- Juice of half an orange (mix in with the melting ingredients)
Cherry and Oreo
Ingredients:
-1x pack of Oreo biscuits
-1x tin of cherries (drain the cherries and cut them into halves, mix some of the cherry juice in with the melting ingredients)
Side note: With the variations that involve extra liquid (e.g cherry juice) allow extra time for the tiffin to set in the fridge before cutting!
