No-Bake Vegan Crumble

This recipe is for anyone that is living alone, or that cooks independently, and doesn't want to go to the trouble of making a big crumble that won't get eaten up. I've always loved making 'mug cakes' for puddings and thought I'd experiment by turning the classic crumble into a no-bake, one serving pud!


What I love about these sorts of recipes is how creative you can get with the flavours. You can easily adjust this recipe to suit the kind of crumble you fancy, for example, you could make a pear and chocolate crumble by switching the apples for pears and adding in 1tsp of raw cacao powder to the crumble mix!

Ingredients


Fruit Mixture

- 1 apple

- handful of sultanas

- 1tsp of cinnamon

- splash of water


Crumble Topping

- 1/2 cup of oats

- 1 tsp cinnamon

- handful of chopped walnuts (optional)

- 1 tsp peanut butter

- 1 tsp date syrup

- splash of water

- 1 tsp coconut oil, melted (if baking)


Optional Topping

- 1tsp of milled flaxseeds

- handful of pumpkin seeds


Method

1. Core and chop the apple into slices

2. Add the apple and sultanas to a saucepan, cover with the cinnamon and enough water to cover the bottom of the pan

3. Cover the saucepan and simmer the fruit mix for 20-30 minutes stirring occasionally to avoid the sultanas burning or sticking to the pan

4. Whilst the fruit cooks, mix all of the crumble ingredients in a separate bowl until a paste forms

5. Once the fruit is cooked, transfer it to a bowl (or an oven-proof ramekin if you do want to bake it) and evenly spread the crumble mixture on top


(If you choose to bake it, add 1tsp of melted coconut oil to the crumble mixture and pop it in the oven at 180°c for 5-10 minutes, checking on it to ensure it doesn't burn)


Serve with coconut yoghurt and the optional toppings!
