Vegan Cookie Dough

Hello hello, it's been a while since I last posted and unfortunately that's probably going to be quite representative of how the next few weeks will go seeing as my uni deadline is fast approaching!

Moving on, this week I thought I'd upload one of my favourite vegan alternatives yet - Cookie Dough!
I actually already did a post about this on my instagram but seeing as I'm about to make another batch of the stuff, I thought I'd write it up on here as well.
There are two variations to this recipe, you can either follow the plain cookie dough recipe or add in some vegan protein powder to make it more 'macro friendly' (aka for the gains).
INGREDIENTS:
OPTION 1: (plain cookie dough)
~ tin of chickpeas (drained) ~3tbsp nut butter ~4tbsp maple syrup ~4tbsp flour ~2tbsp vanilla extract ~2tbsp water ~85% Lindt chocolate
or
OPTION 2: (with protein powder)
~ tin of chickpeas (drained) ~3tbsp nut butter ~4tbsp maple syrup ~4tbsp flour ~40g vegan protein powder (I use Form Nutrition Choc Peanut) ~4tbsp water ~85% Lindt chocolate
METHOD:
- Mix all the ingredients (minus the chocolate) in a food processor or blender until a dough forms
- Break up chocolate into small chunks and mix into the dough (not in a blender)
- Store in fridge
'Tis really that simple & a really nice alternative if you're vegan / dairy free or just simply wanting to try out a new recipe.
